Second-gen ramen shop in Kagoshima

We spent three days working at a family-run ramen shop 🍜 in the town of Kajiki in Kagoshima prefecture, Japan. The shop only opens for 3 hours each day, but their ramen usually sells out in just over 2 hours!

A husband and wife run Ten Ten Yuu, which serves ramen in traditional tonkotsu style i.e. with pork bone broth. They have a few secret ingredients in their amazing recipe β€” one of them is flying fish, which is native to Kagoshima. We won’t reveal the rest, as we’re sworn to secrecy! 😊

Despite opening for just 3 hours, the couple works grueling 12-hour days, diligently making fresh batches of noodles, chashu and broth every day. This was the best tonkotsu ramen we tasted in Kyushu!
